Pathogen testing
Microbial contaminations are predominant problems in the process of food manufacturing. Food pathogens like e. g. Salmonella, Listeria or Campylobacter are responsible for severe and sometimes fatal cases of illness caused by consumption of contaminated food. To guarantee highest food safety, a variety of different pathogen testing technologies are applied in analytical food laboratories.Conventional microbiological methods for the detection and identification of foodborne pathogens are very time-consuming and require a confirmation of positive results. Other methods commonly used for pathogen testing include phenotypic tests such as immunoassays (ELISA) and genotypic pathogen detection methods that are based on nucleic acid sequences. Due to its sensitivity and specificity, polymerase chain reaction (PCR) has been introduced to the food industry as a highly reliable rapid method for pathogen testing. With PCR, no further confirmation of positive results is required.
